Allium stellatum - Wild Prairie Onion
Wild Prairie Onion (Allium stellatum) is a perennial that forms tufts of slender leaves and stems that grow from an edible bulb. The leaves appear in the spring and die back as the flowering stems appear above the foliage. The lavender flowers form 3 - 4 inch wide globe-clusters held upright atop the stem, and remain for 1 - 2 months during the mid-summer heat. All parts of this plant are edible and smell like onions. This bulb is very cold hardy with deep roots, resulting in a drought tolerant plant that will grow in some very inhospitable conditions.

ALLIUM (ONION):
Allium is a genus of 550 - 700 species of flowering plants that include onion, garlic, scallion, shallot, leek, and chives. Allium is the Latin word for garlic, but its common name is onion, and it has been cultivated for many years as an important food crop or garden vegetable. Its flowers form an umbel at the top of a leafless stalk, and its bulbs vary in size depending on the species. The characteristic onion/garlic taste and odor comes from chemical compounds called cysteine sulfoxides, and the pungency depends on the sulfate content of the soil that it grows in.
